I tasted a teaspoon or two today on a couple of my favorite crackers. It's very "clean" as far as cheesy foods go; not at all greasy (Miyoko's brand is rather oily). I wouldn't feel guilty eating 1/4 - 1/3 cup of my version, but I don't think I could even eat that much because it's very rich and the flavor is herbaliciously intense!

I just made a JPG of my Chocolate Zucchini Breakfast Bars recipe and will email it to you!

I know exactly what you mean and live it every day. It brings balance to our life because I am almost the exact opposite. You and my Wife are much alike in some ways.
